A good piroshki recipe?

Makes 10 servings

Ingredients:

1-1/4 lbs lean ground beef
1 onion, finely chopped
1/2 cup Italian parsley, finely chopped
salt and pepper (to taste)
2 tbsp olive oil
2 hard boiled eggs, chopped
1 package buttermilk biscuits (or use your own)
1 raw egg, separated
butter

In a large skillet on medium high heat, add the oil and saute onion. When slightly golden, add the ground beef and brown well, stirring every so often. Next, add the parsley, salt and pepper. Mix well and add the eggs, stir well to combine all of the ingredients.

Preheat oven to 400 deg F. Using a floured board or non stick work surface, work with the biscuits and separated them, you will need to roll them out very thin. Put s tablespoon of the meat mixture in the center of each biscuit. Roll and dab a little of the egg white around the edges to seal the biscuit. Pinch and flute edges. Put fluted side down on greased cookie sheet . Fry or for a healthier version:

Brush the little piroshki with beaten egg yolk and bake for 10 minutes in 400 deg F oven, until golden.

Serve with sour cream, soy sauce, chutney or all of the above!

Freezes well.

    Russian Piroshki [8 servings]

    Dough
    6 cups plain flour
    1 tablespoon dry yeast
    1 tablespoon salt
    1/3 cup sugar
    2 egg yolks
    2 cups milk, warmed
    1 cup melted butter
    1 egg, beaten lightly

    Filling
    1 tablespoon olive oil
    1 medium brown onion, chopped finely
    1 garlic clove, crushed
    1 cup potatoes, peeled and chopped finely
    4 slices bacon, rind removed chopped finely (canadian or aussie style)
    1 lb ground beef
    1/3 cup tomato paste
    2 teaspoons fresh thyme leaves
    1 cup shredded cheddar cheese

    Combine flour, yeast, salt and sugar in large bowl. Make a well in the centre; using hand, mix in egg yolks, milk and butter until mixture is soft and elastic. Scrape down sides of bowl, cover; stand in warm place about 1 hour or until dough doubles in size.
    Meanwhile make the filling. Heat oil in large frying pan; cook onion, garlic, potato and bacon, stirring, until potato softens. Add beef; cook, stirring, until changed in colour. Stir in paste and thyme. cool 10 minutes before filling.
    Turn dough onto floured surface;knead until smooth. Divide dough into 16 pieces;press each piece into 12cm round.
    Preheat oven to 180c/350f. Lightly oil two oven trays.
    Place rounded tablespoon of the filling in centre of each round and a pinch of chedder cheese (optional); gather edges, pinch firmly to enclose filling. Place piroshki, pinched-side down, on prepared trays; brush with egg. Stand, uncovered, in warm place 15 minutes.
    Bake, uncovered, in hot oven about 20-25 minutes or until golden brown.

    BABOUSKA'S PIROSHKI

    MEAT FILLING:

    1 lg. onion
    4 tbsp. cooking oil
    1 lb. ground beef
    Salt, pepper
    2 hard boiled eggs, chopped

    EASY PASTRY:

    2 tubes dairy case biscuits (20 total)
    1/2 c. sifted flour or Bisquick

    Chop the onion and saute it in oil for 5 minutes, then add the ground beef. Cook it until the meat is browned; drained well. Add salt and pepper to taste. Cool and add the chopped eggs.
    Easy Pastry: Roll out each biscuit up to 3 to 4 inches in diameter on a floured surface and fill with 1 to 1 1/2 tablespoons of meat mixture. Fold and press the edges together with a touch of flour so not to stick, until the form resembles a small pie. Now place piroshki's on a lightly greased cookie sheet and bake according to biscuit directions, 10 to 15 minutes.
