I seem to have made a rather large amount and was wondering if it was possible to freeze the left overs for later?

    Definitely. Whenever I make soup from scratch, I always make too much. Freezing soup is easy, and the flavor is maintained well for about 4-6 months. The poster above is correct, you should portion it into small sizes before freezing.

    You can freeze chicken or beef broth, why not borscht (which is essentially a beet-filled vegetable broth with chunks)?

    Yes, just freeze in batches that you will use at a single meal. You don't want to freeze and reheat more than once.
