I don’t get what’s so fancy about fish eggs???

It is not fancy since it is only salt and sturgeon eggs or lump-fish eggs. Lump-fish caviar is not even that expensive since you eat it so sparingly on a cracker and cream cheese but sturgeon eggs are another story all together. The big sturgeon are very rare now. It seems instead of just collecting the eggs and throwing the weird fish back the harvester would take th easy way out and slit the fish and kill her. What a shame.
Caviar is like blue cheese. You have to really develop a taste for it.

Caviar are fish eggs of particular fish that's rare. Not only the rich can afford it there's different levels of caviar you can even buy a cheaper quality lower brand in your local shopping centre.

Because of the process involved in collecting them and preparing it. Its not so "delicate" these days, but a while back a lot of hard work went into it.
