I don’t get what’s so fancy about fish eggs???

    It is not fancy since it is only salt and sturgeon eggs or lump-fish eggs. Lump-fish caviar is not even that expensive since you eat it so sparingly on a cracker and cream cheese but sturgeon eggs are another story all together. The big sturgeon are very rare now. It seems instead of just collecting the eggs and throwing the weird fish back the harvester would take th easy way out and slit the fish and kill her. What a shame.
    Caviar is like blue cheese. You have to really develop a taste for it.

    Caviar are fish eggs of particular fish that's rare. Not only the rich can afford it there's different levels of caviar you can even buy a cheaper quality lower brand in your local shopping centre.

    Caviar is an expensive delicacy consisting of the unfertilized eggs (roe) of sturgeon brined with a salt solution. It is commercially marketed throughout the world as a delicacy and is eaten principally as a garnish or spread, as with hors d'œuvres. The name "caviar" comes from the Persian word (Khāg-āvar) which means "the roe-generator". This name in Persian means the sturgeon and its product, the roe.

    Caviar is more than just fish eggs. It's a delicacy associated with luxury and fine dining. Because it is rare and difficult to obtain, caviar can be rather pricey. Caviar is extracted from the ovaries of the sturgeon, or the eggs that have yet to be laid. Once the eggs are extracted, they undergo a gentle cleansing process during which the skin is removed without breaking the egg itself; this delicate process is reflected in the price.

    Because of the process involved in collecting them and preparing it. Its not so "delicate" these days, but a while back a lot of hard work went into it.
