I take a glass bowl, fill it with cracked ice, then take another smaller bowl and nestle it in the ice and fill it with the caviar to be spooned out by guests with small spoons.
Now some people believe that metal spoons or containers will ruin the caviar, this is a myth. Many of the best caviars are sold in metal tins with no adverse effect. It looks prettier in a glass bowl anyway.
I normally serve it in the Russian style on Blini which are small, non-sweet pancakes with the following side accompaniments for guests to choose from to put on top: minced onion, finely crumbled boiled egg and sour cream or creme fraiche and always, always lots of icy cold vodka to wash it down.
The caviar you get from most grocery stores is garbage. If it's sitting unrefrigerated on a shelf in a jar in a box, it's loaded with preservatives and artificial colours. Use that as a garnish on other foods, not as a stand alone appetizer.
There are many different kinds of fresh caviars in lots of different sizes, colours, salt levels and price ranges so do a little research before you buy to try to figure out what kind you would like best. Marky's is a good site to research where caviars come from and what you might expect to pay.
Fresh caviar is available at gourmet shops, high end grocers and by mail order. I usually serve Malossol (black russian oscetra) caviar because it has a lower salt content and a lovely dark purplish black colour. But there are red, orange, golden, gray, brown, yellow and even green caviars.

I prefer to eat caviar on toast points. Remove the caviar from its original container using a pearl spoon. NEVER use a metal spoon!! If a pearl spoon is unavailable to you, use plastic. Put it in a glass dish and serve. Once again do not use metal of any sort. Yummy!!!

Remove the caviar from the fridge and let stand at room temperature unopened for ten minutes before serving. Just before serving remove the lid.
The caviar may be transferred to small bowls or consumed directly from the container. Putting the container on crushed ice will help prolong the caviar's freshness. There are several decorative caviar presenters on the market specifically for this purpose.
