Question by Jane: How long should I simmer my borsch I’m cooking?
I’ve made Ukrainian borsch many times but I never know how long I should let it simmer before I serve it. It’s a great veggie soup that I usually cook with pork. Is there a point where letting it simmer for too long becomes unsafe or starts to hurt the flavor somehow?

Well, I don’t simmer mine for very long. I usually saute some beef or pork with onions for 10 mins, add my water and my veggies except the beets and simmer for 30-40 mins, then add grated beets & beet juice for the last 10 minutes.
I don’t think it’d become unsafe to let it go for longer, just mushy.
There are also slow cooker versions that go for like 6 hours or longer, but I find the texture isn’t as good.
