Apparently the travel time between Moscow and Beijing is just over 6 days. So, if you are going to take the trip you might as well stay a few days!

I just want to warn you that TranSiberian is JUST a train. I have heard complains that the shower was small and dodgy, the bed was not very comfortable. IT'S A TRAIN, it hasn't been build to impress tourists, it is just for communication reason. The railway normally doesn't go through cities, only suburbs because of the noise and pollution and you will not see beautiful cities from the train. Therefore if you want to have a look around, it is probably a good idea to do a few stops. If you want to meet people trip on Tran Siberian railway is right thing to do.

But as far as I know, you need separate tickets for each part of your trip with the date in it. I hope you will enjoy your trip
