Leftover potato-cheddar pierogi filling?

Question by Do your own thinking!: What can I do with leftover potato-cheddar pierogi filling?
It’s much drier and cheesier than regular mashed potatoes with cheese. I know I could add more potatoes and some cream or milk, but — any other ideas out there?

    mix it w/ chipotle peppers in adobe and use it for a re-stuffed potato filling.

    add a little flour to make dough, roll into cigar like ropes, cut the ropes into one inch pieces, drop in boiling salted water cook until they float to the top, drain voila-gnocchi! Serve with sour cream and chives or in a sauce

    If you shape them into patties and coat with fresh or even dried Italian style bread crumbs…you could brown them up in some olive oil. I am sure they would be great.

    I do this all the time with leftover mashers. I'm sure they would be equally delicious with your pierogi filling.

    Potatoe pancakes!!! Or roll into balls, coat in panko bread crumbs and fry until golden brown. You can also add them to meatloaf.

    make potato pancakes or better yet, make sheppard's pie (sometimes called Cumberland pie).
    Perioges can be frozen.

    fry up some hamburger and mix it all together top with caramelized onions… yummm!!!

    You could use it as a topping for a Sheperd's Pie, that would be really delicious.
