pastie is baked and pierogi is boiled.
a pastie can be held in the hand and eaten and is almost a type of sandwich.
a pierogi is smaller, only a bite or 2 and you eat a plate full of them.

The pasty is a British pastry, while the pierogi is a Slavic dumpling (also called in some countries 'varenyky' but they're similar (so are dumplings in other countries, called ravioli, wonton or gyoza)
