for an example, does the roe in sushi counts as caviar?

Cavier is just a fancy name for it.
Like when the french call it escargot and by gosh, its snails.

Caviar is the roe of sturgeon, especially the beluga. The best of it comes from the Caspian Sea.

Caviar comes from a very small number of fishes and only in some geographical areas. The most famous is from the Russian Sturgeon from Caspian Sea.
