Question by queengerbil: What type of cheese should I put in a piroshki?
I’m trying to recreate a piroshki I had in Seattle but I need some help. My favorite was the beef, potato, and cheese one, however I’m not sure what type of cheese they use. It appears white and isn’t too strong or thick. Any ideas?

You could use cheddar, mozarella, goat cheese, cottage cheese (drained), ricotta, or others. Keep in mind, this began as peasant food. They didn’t have access to “fancy” cheeses, like cheddar. A farmer’s-type cheese would be the norm.

The only piroshki I've ever had were all filled with dry cottage cheese. It should be on the shelf at the market where you purchase regular cottage cheese.
