Question by Jane: How long should I let my soup simmer?
I’m making Ukrainian borsch with tons of veggies and pork. I never know how long to let it simmer. And how long is too long? Is there a point where it simmers so long that it starts to lose flavor?

as long as the pork is cooked I don’t think it matters casue the next day soup is usually better, right

soup is better the next day. cook it, then let it cool, then reheat. This helps the melding of flavors.

simmer till the pork is tender and the vegetables are tender. Over cooking results in the vegetables getting mushy.
