Kebobs, from the Turkish for grilled meat, is usually marinated lamb, although beef and chicken have been used in some areas of the mid-east. Perhaps the earliest recipe is in the tenth-century Kitab al-Tabeekh (book of cookery) by Ibn Sayyar al-Warraq of Baghdad. The shish, is from the Turkish word for skewer.
Shashlik was the version of kebobs from the Caucus countries (Armenia, Georgia, etc.) it spread throughout Russia, and unlike its more halal (the rules of acceptable food in Islamic societies) cousin, shashlik can sometimes have pork as well as the meats mentioned above. here is the derivation of shashlik from the American Heritage dictionary:
    SYLLABICATION:shash·lik
    PRONUNCIATION: shäsh-lk, shäshlk
    VARIANT FORMS: or shash·lick
NOUN: A dish consisting of marinated cubes of lamb or beef grilled or roasted on a spit, often with slices of eggplant, onion, and tomato; shish kebab.
    ETYMOLOGY:Russian shashlyk, of Turkish origin.
